Frozen Hot Chocolate, Serendipity Style!

Frozen Hot Chocolate, Serendipity Style! A few weeks ago I was in NYC for literally less than 24 hours and one of the only things I was able to squeeze in other than what I was there for was a visit to Serendipity for one of my favorite treats…..the Frozen Hot Chocolate. It is massive, chocolaty and perfectly ice-y. I used mini chocolate chips, but you can used shaved chocolate that looks more authentic to the original 🙂 INGREDIENTS: 2 cups whole milk Five 1.25 ounce packets of Hot Chocolate mix 4 cups ice 1 cup heavy cream 2 tablespoons granulated sugar 1/4 cup mini chocolate chips or grated chocolate Intructions: Place milk into blender. Add hot chocolate packets and blend until combined. Add ice and blend until ice is blended into tiny chunks. Pour evenly into 4 glasses on top of plates to catch any dripping frozen hot chocolate. Sticky Bun Breakfast Ring I made this recipe on Monday for breakfast from The Jones Way (recipe and image) It is super delicious, super quick and easy and thanks to coupons, it is super inexpensive. INGREDIENTS: 2 small tubes refrigerator buttermilk biscuits OR 1 tube Pillsbury Grands buttermilk biscuits 3 Tbsp. butter, melted 1/2 C. pancake syrup (any brand you like, I used Mrs. Buttersworth) 1/3 C. packed light brown sugar 1/2 tsp. cinnamon 1/4 C. chopped pecans, optional 1/4 C. chopped almonds, optional Instructions: Spray a fluted pan with non-stick spray. Combine the melted butter and syrup in a small bowl and set aside. In another bowl, combine the brown sugar, cinnamon, and nuts (if desired). Place about half of the syrup mixture in the bottom of the pan. Then sprinkle half of the brown sugar mixture on top. Lay the biscuits on the bottom of the pan, overlapping edges (closely together) to form a ring. Top with remaining syrup and sugar mixtures. Bake at 375 degrees for approxi...

Moist Lemon Cake Recipe This moist lemon cake recipe is so delicious! I found this lemon ice pick cake recipe in my little recipe box from our wedding that I’ve had fun sorting through. Although I didn’t have an ice pick, I did have a chopstick to make this lemon jello cake recipe. It’s so easy! Are you thinking spring? I don’t know why, but lemons remind me of clean and clean reminds me of spring cleaning and spring cleaning reminds me of needing dessert. Because, well you need dessert after spring cleaning. Am I right? But let’s just focus on the cake for now. The original recipe called for an ice pick. Since I didn’t have one of those around, I decided to use a chopstick. White Chicken Enchiladas White Chicken Enchiladas are ALL the rage, and for good reason. The flavor is incredible. Bold flavor but not spicy. Creamy comfort food, yet not too rich. These are a winner in all categories and will satisfy even the pickiest eater. These are not your typical enchiladas. Traditionally, enchiladas are made with corn tortillas and a red or green sauce. These are a “whole other thing”….and so so good. I have a big family and we love to have big Fiesta Night dinners. Tacos, taquitos, nachos, and of course these enchiladas are a must. CHEESY CAULIFLOWER BREADSTICKS – KETO AND GLUTEN FREE Using the same idea as pizza crust, it’s easy to make a low carb cheesy cauliflower breadsticks recipe instead. Simply leave out the pizza sauce! I’m always amazed by all the fantastic things you can do with cauliflower. It’s a staple ingredient on low carb and goes way beyond a potato substitute. When I got started on this way of life, I discovered that cauliflower can make a fantastic pizza crust. As the years went on, I also experimented with using it in chocolate pudding and pie crust. I’ve also seen others sneak this versatile vegetable into pumpkin pie because it’s a terrific thickening agent. Because of this property, it’s often used to thicken soups as well. But, I’ve gone back to the basic pizza crust recipe to make a low carb cheesy cauliflower breadsticks recipe. And, you don’t have to limit yourself with the standard rectangular sticks. Crazy-Good Crab Cakes! If you like crab, you should definitely give these a go...you'll end up with a full belly and a big smile! Bon Appetit, my friends! Crazy-Good Crab Cakes Adapted from: Culinary Reserve Premium Hand-Picked Crab Meat packaging Ingredients: 1 lb. Lump Crab Meat  2 Slices White Bread, crumbled, crust removed (I processed mine in a food processor) 1 Egg, beaten 2 tbsp. Mayo 1 tsp Seafood Seasoning (such as Old Bay Seasoning) 1 tsp. Worcestershire Sauce 1 tsp. Dijon Mustard 1 tbsp. Dried Parley Flakes (I used freshly chopped cilantro, instead) 2 tsp. lemon juice Extra virgin olive oil or butter (for sauteing)  Directions: Combine all ingredients except the crab meat in a bowl. Gently fold in crab meat and chill for one hour before forming into three ounce cakes. Drizzle 1 tbsp of olive oil or butter in the bottom of a medium skillet.
